We want to offer our guests sustainable and high-quality enjoyment. When purchasing our food, we therefore pay close attention to origin, quality and regionality. We attach great importance to regional sourcing and regularly include these products in our range. When it comes to fish, we only source products from sustainable fisheries and from those that bear the ASC and MSC seal.
More and more people are thinking about issues that go beyond satisfying their own needs. Issues such as climate and resource protection, biodiversity, fair wages for farmers in developing countries and socially acceptable working conditions are now topics of conversation when it comes to food.
In our daily procurement of food and products, we make every effort to source locally. Unfortunately, this is not always possible due to the required quantities and limited availability. We also adapt the selection of dishes and recipes to seasonal and regional fruit and vegetables as far as possible.

For reasons of animal welfare, environmental protection, health and, of course, taste, we are increasingly focusing on sustainable and climate-friendly nutrition. As a result, we have also increased the proportion of vegan and vegetarian dishes, as can be seen here in the example of CANTEEN
